The practice of Menglong ice cream
- Prepare two of these molds.
- Mix egg yolks, caster sugar and mix well.
- Stir until sugar is not grainy.
- Heat the milk until there are small bubbles.
- Pour milk into the egg batter, pay attention here, be sure to pour a small amount slowly, and keep stirring to prevent the milk from scalding the egg yolk.
- Boil water in a pot, bring to a boil, turn to the lowest heat, put the pot on it, and stir with the heat-insulated water until the egg batter becomes thick and then turn off the heat. About 5-6 minutes.
- It’s ok if the video is in this state, but it can’t be too dry. Then set aside to cool.
- Drop vanilla extract into the whipped cream and whip it. There is no need to add sugar to the cream.
- The cream can be whipped with texture, it doesn’t need to be hard.
- Take 1/3 of the whipped cream and mix well with the egg batter.
- Then pour it all into the remaining cream and mix well.
- Prepare a piping bag, as shown in the picture, so that it is easier to pour.
- Then extrude into the mold.
- Secure the lid and freeze for at least 5 hours. I froze overnight and it would be better to unmold.
- Menglong’s chocolate crispy skin below, chocolate coins (black Qiao + white Qiao) are melted in insulated water, you can boil a pot of hot water, put the pot in the hot water, turn off the heat after it is completely melted, add coconut oil, Continue to mix well.
- Pour it into a container. The diameter of the container should not be too large, but it should be high enough to make the wall of the ice cream smooth.
- The ice cream is demolded.
- Put it in the chocolate, then take it out, making sure the movements are neat and tidy, waiting for the chocolate to stop dripping before picking it up.
- Insert this on the foam and let the temperature of the ice cream set the chocolate completely, about 10 minutes.
- Take a bite, the taste is not bad, it’s so fulfilling, haha!
- Pack it in a sealed bag and store it in the freezer. Do I still need to go to the supermarket to buy it?
Tips
The extra chocolate can be kept refrigerated and can be used next time.
